The London Fog Cutter

2 ounces of Gin
1 ounce of fresh lime juice
6 ounces of Champagne

Serve over ice
(hat-tip: Dr Tiki of London's Tiki bar)

and just to ring the changes how about a straight Fog Cutter?

The Original Fog Cutter

1 1/2 oz light rum
1/2 oz gin
1/2 oz brandy
1 oz orange juice
3 tbsp lemon juice
1 1/2 tsp orgeat syrup*
1 tsp sweet sherry

Shake all ingredients and strain into a Collins glass over ice cubes. Top with a teaspoon of sweet sherry and serve.

* Orgeat syrup is a sweet syrup made from almonds, sugar and rose water/orange-flower water. It was, however, originally made with a barley-almond blend. It has a pronounced almond taste and is used to flavor many cocktails.

Orgeat syrup can be hard to find, but can be found in some stores that sell coffee syrups/flavorings. If you cannot find it, almond syrup is a good substitute for orgeat syrup
